L&rsquo;acide capro\u00efque et l&rsquo;acide butyrique sont les principaux acides gras responsables du go\u00fbt rance ind\u00e9sirable dans les fromages affin\u00e9s. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une m\u00e9thode d&rsquo;analyse d\u00e9velopp\u00e9e par Agroscope a permis de d\u00e9tecter ces deux acides gras dans le lait provenant de syst\u00e8mes de traite automatiques et traditionnels. Source : Agroscope<\/figcaption><\/figure>\n<\/div>\n<\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Sur les 50 AMS install\u00e9s dans le cadre de l&rsquo;\u00e9tude, 21 producteurs ont enregistr\u00e9 une baisse de la teneur en acides gras libres, dont 9 une baisse significative. En revanche, chez les 29 producteurs laitiers restants, la teneur en acides gras libres a augment\u00e9, dont 22 de mani\u00e8re significative. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>R\u00e9sum\u00e9<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00eame si la situation est beaucoup plus complexe, qu&rsquo;il existe de nombreuses variables et que l&rsquo;AMS a parfois permis d&rsquo;am\u00e9liorer la qualit\u00e9 du lait, on peut affirmer que la proportion d&rsquo;acides gras, notamment d&rsquo;acide butyrique et d&rsquo;acide capro\u00efque, est en moyenne plus \u00e9lev\u00e9e dans le lait trait par les AMS.<\/p>\n\n\n\n<p class=\"advgb-dyn-71f36f02 wp-block-paragraph\">Un AMS ne signifie donc pas n\u00e9cessairement une moins bonne qualit\u00e9 du lait, mais d\u00e9pend de nombreux facteurs. Une \u00e9tude men\u00e9e par Woodhouse en 2023 a analys\u00e9 les facteurs responsables de l&rsquo;augmentation des acides gras libres.
