Cependant, certains affirment que la qualit\u00e9 du lait obtenue avec cette technique est inf\u00e9rieure \u00e0 celle obtenue avec un syst\u00e8me de traite traditionnel (traite directe ou salle de traite) et qu&rsquo;elle n&rsquo;est donc pas adapt\u00e9e \u00e0 la production de fromages de qualit\u00e9. L&rsquo;hypoth\u00e8se sous-jacente est que l&rsquo;action m\u00e9canique ou les intervalles de traite rendent la paroi des globules gras plus instable, ce qui lib\u00e8re des acides gras libres.
