Cette observation est v\u00e9rifi\u00e9e pour le march\u00e9 du lait en Suisse :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sur le march\u00e9 du lait, de nombreux fournisseurs (17000 producteurs) font face \u00e0 relativement peu d&rsquo;acheteurs (acheteurs de lait, transformateurs). Les acheteurs tentent de r\u00e9percuter la pression du march\u00e9 sur le prix du lait. Les producteurs essaient de compenser la baisse des recettes par des quantit\u00e9s suppl\u00e9mentaires.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le producteur de lait individuel et les petits groupements de producteurs ne disposent souvent pas de toutes les informations sur le march\u00e9 et ne sont pas en mesure de proc\u00e9der \u00e0 des \u00e9tudes de march\u00e9.<\/li>\n<\/ul>\n\n\n\n<p>La carte nationale de la fili\u00e8re lait et fromages (unit\u00e9 en million de kg d\u2019\u00e9quivalents-lait) a \u00e9t\u00e9 r\u00e9alis\u00e9e sur la base des r\u00e9f\u00e9rences statistiques de l\u2019ann\u00e9e 2022. Deux types de lait sont \u00e0 distinguer : le lait de fromagerie (en jaune sur la carte), principalement \u00e0 base de lait de non-ensilage (interdiction d\u2019utiliser de l\u2019ensilage dans l\u2019alimentation des vaches), et le lait d\u2019industrie ou lait de centrale (en blanc cass\u00e9 sur la carte), \u00e0 base de lait d\u2019ensilage. En vert, 8,6 % du lait commercialis\u00e9 respecte le cahier des charges bio. Le producteur livre directement son lait chez le transformateur (fromager, laiterie ou soci\u00e9t\u00e9 de fromagerie) ou \u00e0 un point de collecte, puis le lait est transport\u00e9 par camion chez un transformateur r\u00e9gional ou national. Les fromages \u00e0 p\u00e2te molle n\u00e9cessitent un temps d\u2019affinage de 7 \u00e0 10 jours, et de 17 jours au minimum pour le Vacherin Mont-d\u2019Or AOP. Les affineurs et les n\u00e9gociants en fromage, avec leurs installations d\u2019affinage, de conditionnement et de logistique, sont des acteurs importants de la fili\u00e8re du fromage. En Suisse, ils constituent un lien crucial avec le commerce de d\u00e9tail et, \u00e0 l\u2019exportation, avec les grossistes et les d\u00e9taillants des pays d\u2019exportation.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-getwid-accordion__header-wrapper\"><span class=\"wp-block-getwid-accordion__header\"><a href=\"#\"><span class=\"wp-block-getwid-accordion__header-title\">6 DISTRIBUTION ET CONSOMMATION<\/span><span class=\"wp-block-getwid-accordion__icon is-active\"><i class=\"fas fa-plus\"><\/i><\/span><span class=\"wp-block-getwid-accordion__icon is-passive\"><i class=\"fas fa-minus\"><\/i><\/span><\/a><\/span><\/div><div class=\"wp-block-getwid-accordion__content-wrapper\"><div class=\"wp-block-getwid-accordion__content\">\n<p>Le bilan exportation-importation (en \u00e9quivalents-lait) s\u2019est fortement d\u00e9grad\u00e9 depuis la lib\u00e9ralisation du march\u00e9 entre la Suisse et l\u2019UE d\u00e8s 2002. 22,2 % des produits laitiers fabriqu\u00e9s en Suisse sont export\u00e9s (9,8 % de fromages, 1,8 % de produits frais, 10,6 % de produits transform\u00e9s). En 2022, 18,6 % des produits laitiers consomm\u00e9s en Suisse avaient \u00e9t\u00e9 import\u00e9s (8,2 % de fromages, 5,6 % de produits frais, 4,8 % de produits transform\u00e9s).<br>En ce qui concerne les quantit\u00e9s de fromage, la balance commerciale \u00e9tait n\u00e9gative pour la premi\u00e8re fois en 2023. Les exportations de fromages se sont tass\u00e9es en 2023 en raison de la hausse de l\u2019inflation dans l\u2019UE et du franc fort (consulter \u00e9galement le paragraphe 2.6.2). En 2023, la part indig\u00e8ne de fromages consomm\u00e9s s\u2019\u00e9levait \u00e0 63,9 %. La cat\u00e9gorie des fromages frais (43,5 %) reste la cat\u00e9gorie pr\u00e9dominante des importations, suivie par celle des fromages \u00e0 p\u00e2te molle (18 %). Plus d\u2019un quart des importations viennent d\u2019Allemagne avec un prix moyen de 5.05 fr.\/kg. Plus de la moiti\u00e9 des importations sont \u00e9coul\u00e9es dans l\u2019industrie alimentaire et la restauration.<br>Les distributeurs Migros et Coop sont incontournables sur les march\u00e9s de d\u00e9tail et dominent la distribution avec des parts de 35 % pour Migros et de 34 % pour Coop.
