La diversit\u00e9 est particuli\u00e8rement marqu\u00e9e en ce qui concerne les fromages. Pour quelques vari\u00e9t\u00e9s de fromage et d\u2019autres produits laitiers, on observe parfois des fluctuations d\u2019une ann\u00e9e \u00e0 l\u2019autre. Pour le fromage, outre le volume de production, la variation du niveau des stocks influence la quantit\u00e9 disponible. La Suisse compte un total de 12 fromages AOP. Le Gruy\u00e8re AOP et l\u2019Emmentaler AOP sont les deux poids lourds du domaine, cumulant 80 % des volumes AOP. Les fromages avec une production annuelle inf\u00e9rieure \u00e0 1000 tonnes sont principalement des fromages d\u2019alpage. Les co\u00fbts de production du lait d\u2019ensilage sont moins \u00e9lev\u00e9s que ceux du lait de non-ensilage soumis \u00e0 des contraintes de production plus s\u00e9v\u00e8res. Les vari\u00e9t\u00e9s de fromage type raclette (hors AOP) ainsi que des fromages bon march\u00e9 destin\u00e9s \u00e0 l\u2019exportation sont fabriqu\u00e9s avec du lait d\u2019ensilage.<\/p>\n\n\n\n<p>La part de lait de non-ensilage sur le lait total commercialis\u00e9 s\u2019\u00e9l\u00e8ve \u00e0 32&nbsp;% sur la derni\u00e8re d\u00e9cennie. La production globale a progressivement augment\u00e9 de 2006 \u00e0 2014, avec une part croissante, aussi en quantit\u00e9 absolue, de lait d\u2019ensilage. Cette augmentation s\u2019est faite au d\u00e9triment du lait de non-ensilage. Alors que l\u2019Emmentaler AOP repr\u00e9sentait 39 % des exportations en 2007, il n\u2019en repr\u00e9sentait plus que 12 % en 2023. Le Gruy\u00e8re AOP a en revanche progress\u00e9 de 1 700 tonnes depuis la lib\u00e9ralisation et constitue d\u00e9sormais 17 % des exportations. L\u2019ensemble des six fromages AOP export\u00e9s repr\u00e9sentent le tiers des exportations suisses.<br>La baisse constante des volumes d\u2019Emmentaler AOP a \u00e9t\u00e9 compens\u00e9e par la fabrication croissante de toute une cat\u00e9gorie d\u2019autres fromages \u00e0 p\u00e2te mi-dure et dure. Le fromage Switzerland Swiss est un fromage \u00e0 faible valeur ajout\u00e9e appartenant \u00e0 cette cat\u00e9gorie de fromage. Le producteur de lait destin\u00e9 \u00e0 la fabrication de Switzerland Swiss n\u2019est r\u00e9mun\u00e9r\u00e9 qu\u2019au prix \u00e9quivalent \u00e0 celui du lait de centrale. En revanche, et pour la premi\u00e8re fois, la Suisse connait une balance commerciale n\u00e9gative&nbsp;: les volumes des fromages import\u00e9s ont d\u00e9pass\u00e9 les volumes des fromages export\u00e9s en 2023. La part des fromages import\u00e9s dans la consommation a progress\u00e9&nbsp;: de 20&nbsp;% en 2000 \u00e0 37&nbsp;% en 2023.
