La <strong>production totale de fromage<\/strong> atteint environ <strong>200 000 tonnes<\/strong>, incluant aussi des fromages frais et \u00e0 p\u00e2te molle (s\u00e9r\u00e9, mozzarella, tomme) et certains \u00e0 p\u00e2te mi-dure (Raclette Suisse, Tilsit), souvent issus de lait trait\u00e9 thermiquement.<\/p>\n\n\n\n<p>La Suisse compte <strong>plus de 450 vari\u00e9t\u00e9s de fromages<\/strong>, illustrant une richesse unique. Le <strong>lait de centrale<\/strong> est principalement valoris\u00e9 sous forme de lait de consommation, beurre, cr\u00e8me, fromages frais (s\u00e9r\u00e9, mozzarella), lait en poudre et autres sp\u00e9cialit\u00e9s laiti\u00e8res.<\/p>\n\n\n\n<p>L\u2019industrie fabrique aussi de nombreux <strong>produits semi-finis<\/strong>, destin\u00e9s \u00e0 \u00eatre transform\u00e9s par l\u2019industrie alimentaire. \u00c0 l\u2019export, le lait suisse est <strong>davantage valoris\u00e9 sous forme de produits alimentaires transform\u00e9s<\/strong> que sous forme de fromage. En 2022, cela repr\u00e9sentait <strong>plus de 350 millions de kilos de lait<\/strong>, soit <strong>10 % de la production nationale<\/strong>.<\/p>\n\n\n\n<p>Malgr\u00e9 une certaine stabilit\u00e9 dans les volumes transform\u00e9s, <strong>la consommation de lait diminue progressivement<\/strong>, et une <strong>l\u00e9g\u00e8re baisse<\/strong> des quantit\u00e9s annuelles de lait de centrale mondial<\/strong>.<\/li>\n\n\n\n<li>Environ <strong>75 % du lait suisse<\/strong> est expos\u00e9 \u00e0 la concurrence internationale, notamment dans les secteurs du <strong>fromage<\/strong> et des <strong>produits semi-finis<\/strong> (ex. : poudre de lait).<\/li>\n\n\n\n<li>Les <strong>importations de fromage<\/strong> augmentent, surtout dans les segments \u00e0 bas prix, tandis que les <strong>exportations suisses stagnent<\/strong>.<\/li>\n<\/ul><\/div>\n\n\n\n<p><strong>Prix et handicap concurrentiel<\/strong><\/p>\n\n\n\n<div class=\"wp-block-advgb-list\"><ul class=\"advgblist-0727d921-b3cb-448c-9408-6bbfb2e890e9\">\n<li>Les mesures d\u2019entraide ont permis d\u2019augmenter l\u2019\u00e9cart de prix entre le lait suisse et le lait \u00e9tranger <strong>en faveur des producteurs suisses<\/strong>.<\/li>\n\n\n\n<li>Ce succ\u00e8s cr\u00e9e un <strong>handicap de prix<\/strong> sur les march\u00e9s ouverts, rendant les produits suisses moins comp\u00e9titifs \u00e0 l\u2019export.<\/li>\n\n\n\n<li>L\u2019industrie alimentaire suisse privil\u00e9gie le <strong>trafic de perfectionnement<\/strong>, utilisant des produits \u00e9trangers pour les denr\u00e9es export\u00e9es.<\/li>\n<\/ul><\/div>\n\n\n\n<p><strong>R\u00e9gulation du march\u00e9<\/strong><\/p>\n\n\n\n<div class=\"wp-block-advgb-list\"><ul class=\"advgblist-b70a46f3-85fd-4719-9d30-c6e62c60be11\">\n<li>De moins en moins d\u2019acteurs participent \u00e0 la r\u00e9gulation du march\u00e9 (ex. : Hochdorf se retire de la production de poudre de lait).<\/li>\n\n\n\n<li>La r\u00e9gulation des <strong>exc\u00e9dents saisonniers<\/strong> (surtout de prot\u00e9ines, potentiellement aussi de mati\u00e8re grasse) est cruciale pour la <strong>stabilit\u00e9 du march\u00e9<\/strong>.<\/li>\n<\/ul><\/div>\n\n\n\n<p><strong>Concurrence sur le march\u00e9 int\u00e9rieur<\/strong><\/p>\n\n\n\n<div class=\"wp-block-advgb-list\"><ul class=\"advgblist-9b64905b-5765-4ba8-8fbb-d0653d2fd608\">\n<li>Environ <strong>40 % du lait suisse<\/strong> est \u00e9coul\u00e9 par <strong>Migros et Coop<\/strong>, 10 % par d\u2019autres distributeurs.<\/li>\n\n\n\n<li>L\u2019int\u00e9gration du commerce de d\u00e9tail dans l\u2019<strong>IP Lait<\/strong> est vue positivement, mais la <strong>pression sur les prix<\/strong> reste forte.<\/li>\n\n\n\n<li>De <strong>nouveaux acteurs paysans<\/strong> (ex. : fromagerie du Diemtigtal) accentuent cette pression.<\/li>\n<\/ul><\/div>\n\n\n\n<p><strong>Structure du fromageries<\/strong>.<\/li>\n<\/ul><\/div>\n\n\n\n<p><strong>R\u00f4le des grands acteurs<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Des entreprises solides financi\u00e8rement, comme la <strong>ZMP (Genossenschaft Zentralschweizer Milchproduzenten)<\/strong>, soutiennent des fromageries en difficult\u00e9.<\/li>\n\n\n\n<li>ZMP est actionnaire majoritaire d\u2019Emmi AG et a investi dans plusieurs structures: Napfmilch AG, Marbach AG, Caseificio del Gottardo SA, LATI SA.<\/li>\n<\/ul>\n\n\n\n<p><strong>Investissements industriels<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>En 2023, <strong>Emmi<\/strong> a inaugur\u00e9 une <strong>nouvelle fromagerie industrielle \u00e0 Emmen<\/strong>, avec une capacit\u00e9 de <strong>10 000 tonnes par an<\/strong>.<\/li>\n\n\n\n<li>Emmi a \u00e9galement rachet\u00e9 plusieurs PME : Studer AG, Rutz, Biedermann AG, Regio Molkerei Frenkendorf.<\/li>\n<\/ul>\n\n\n\n<p><strong>Reprises de fromageries paysannes<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>ELSA\/Migros<\/strong> a repris plusieurs fromageries cr\u00e9\u00e9es par des producteurs :\n<ul class=\"wp-block-list\">\n<li>Bergk\u00e4serei Sennaria Surselva (Disentis)<\/li>\n\n\n\n<li>Augstbordk\u00e4serei (Tourtemagne)<\/li>\n\n\n\n<li>Simmental Switzerland AG (Diemtigtal)<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Migros<\/strong> d\u00e9tient d\u00e9sormais <strong>50 % d\u2019Aaremilch<\/strong>, transform\u00e9e en <strong>organisation de producteurs-utilisateurs (OPU)<\/strong>.<\/li>\n\n\n\n<li>La strat\u00e9gie d\u2019exportation de Simmental Switzerland n\u2019a pas \u00e9t\u00e9 rentable, et l\u2019objectif de garder la valeur
